My 1 Blissful Chocolate Treat That is Secretly Healthy and AMAZING

I am sitting down in the living room right now to write this and I was talking to my daughter about what I was writing about and mentioned that I was going to include our chocolate cake recipe. She said, “No, mommy. Don’t write about that. Write about money! And trading money for Peppa and Daddy Pig!” (Trading money is how we describe paying for things at the store.)

After I burst out laughing I realized, she really gets what blogging is about! After all, she was wanting to tell you about her day, and to share her joy with you! Which is exactly what I want to do myself…well, especially the sharing my joy with you part AND helping you discover your own joy and bliss and how you can actually live your dream life right now! But I digress….

This week has been full of cute and crazy moments! Stuffed full. From the outside it probably looks like I haven’t done anything besides wake up, workout, take a shower…and feed everyone and clean up. And it feels like that is all I have been doing. But the truth is, I have barely had the time to do anything else! Between contract blogging (which I will finally be finished with next week!!!!!!) and potting training my 2 year old and running around in the car for errands or appointments….I haven’t had time to breath!

Literally. I promise, I still have those days where I have so much to do and get so little done that I feel totally overwhelmed and have a hard time breathing. Even though I know it is imperative that I eliminate and prioritize and become good friends with the word, “No”. I still fall into the trap of trying to do too much! I’m only human, too. A very human, sometimes overwhelmed, mom and wife and #mompreneur . Which means if I can learn to (usually!) prioritize and eliminate and create bliss like a pro (which I DO), then you can too!

Anyways, in the last few crazy weeks I might not have been visibly achieving my dreams despite how busy I have been behind the scenes….but I DID accomplish one big thing that is extremely important to me and that is a HUGE part of my dreams: spending blissful, precious moments of fun with my family in the midst of the craziness.

Somedays this looked like sitting and reading books to my daugher for half an hour in the middle of the day. Or going out for a walk to look for our neighbor’s bunny rabbit statue at 3:00PM in the afternoon. And even taking the time to bake together! (Which has the added benefit of giving me the time to work while she is indulging in her treat!)

Now, here is a little secret you probably don’t know about me: I have adrenal fatigue. I’ve been battling it since I graduated college, though I was much better for a while before I had my daughter 2 years ago 😜  I wonder why I’ve relapsed….hmmm…..it’s not like mom’s don’t get to sleep or anything.

Anyways, to heal my adrenals I’ve been doing lots of things, but one of those is not eating sugar or carbs. Which means it is really hard to find chocolate (let alone chocolate cake!) that I can eat. Which is so sad since chocolate is my favorite food ever, besides wine of course! 😉

So I was tentatively excited when I came across a decadent looking Molten Lava Cake recipe from my absolute favorite food blog 40 aprons!

I posted this picture of the dreamy goodness I created on Instagram and had several people ask me for the recipe! Since I didn’t have some of the ingredients such as coconut oil that the recipe called for on hand I had to change up the recipe. So I decided to write out my own recipe for you over here on my blog! Which means I am doing something I almost never do (since I’m not a food blogger!), which is write a recipe post!

But you asked for it, so I am delivering 😉

My Modified Molten Lava Cake

1/3 cup butter

1/2 cup cocoa powder

1/4-1/2 cup maple syrup (start with 1/4 cup and then work up to 1/2 cup to taste)

1/2 tsp. vanilla

2 TB Almond Flour

1TB Coconut Flour (this brand is the lightest and tastiest I’ve found!)

3 eggs

  1. Preheat the oven to 450 degrees. Grease two small ramekins (though…I skipped this step and only used 1 ramekin which I kept reusing! But I would have made it easier on myself it I actually used 2 greased ramekins.)
  2. Melt the butter in the microwave (25-40 seconds should get it sufficiently soft) or in a pan on the stove. Gently mix in the cocoa powder and then the maple syrup to taste.
  3. Add the vanilla.
  4. Fold in the almond flour and the coconut flour.
  5. Whisk in the eggs.
  6. Divide the batter between the ramekins. Bake the two cakes for about 10 minutes, or until the cake has puffed up and the edges are firm but the center is still wet and “jiggly”.
  7. Use a spoon to separate the cake from the ramekins and gently lift it out. Don’t worry if it breaks as you move it to a plate! After all…that’s what a molten lava cake is supposed to do!

Now it is just time to enjoy! Immediately. Since it is best when it’s hot. 😉
